Pumpkin oatmeal is a great way to incorporate some extra nutrition into your breakfast!
Ingredients:
1 cup water
½ cup old-fashioned oats
¼ cup canned pumpkin
½ teaspoon vanilla extract
¼ teaspoon pumpkin pie spice
¼ teaspoon cinnamon
¼ cup unsweetened vanilla almond milk
1 package Stevia
Instructions:
1. In a medium saucepan, combine water, oats, pumpkin, vanilla, pumpkin pie spice, cinnamon.
2. Bring to a boil.
3. Turn heat down to a soft boil and cook for 4 minutes.
4. Stir often.
5. Stir in milk and your favorite sugar substitute, to taste.
6. Cook 1 more minute or until desired consistency.
7. Pour into a bowl.
Makes 1 serving
Optional: Top the oatmeal with diced pecans, raisins, or walnuts and serve hot!
