Makes 24 biscuits
Ingredients:
- 1 cup spelt flour
- ¾ cup oat or millet flour
- 4 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp baking soda
- 1/8 tsp sea salt
- 1 scoop vanilla protein powder
- 2 tsp raw organic honey
- ¼ cup olive oil
- 1 cup low-fat plain yogurt or nonfat greek yogurt
- 1 cup apple, unpeeled and shredded with a grater
- Olive oil cooking spray
Instructions:
- Preheat oven 400 degrees
- In medium bowl whisk together dry ingredients
- In small bowl, whisk together honey, oil, yogurt and apples
- Add wet ingredients to dry ingredients and combine. Do not over mix!
- Mist baking sheet with cooking spray. Drop dough by rounded tablespoons onto baking sheet, 1 inch apart. Sprinkle Sweetened Oat Topping (please see below) on each biscuit. Bake 10-15 minutes until biscuits are golden.
Sweetened Oat Topping: Makes ½ Cup
Ingredients:
- ¼ cup rolled oats
- 1 tsp olive oil
- 1 tsp organic evaporated cane juice or Sucanat (Sucanat is sugar in its most natural form.
Instructions:
In small bowl, mix all ingredients until combined
