Easy Chicken Dinner
Ingredients
1 whole chicken tips and giblets removed
2 tbsp. olive oil
Seasoned salt and pepper to taste
Instructions
Preheat oven to 425
Prep chicken and place breast side up in baking dish
Coat skin thoroughly with olive oil
Use seasoned salt and pepper to season skin
Place in oven and roast for 15 minutes, reduce temperature to 375 and cook for 1 hour more or until breast reaches 165
Remove from oven, cut and serve
Moist Baked Potatoes
Ingredients
Russet potatoes
Olive oil
Kosher sea salt
Instructions
Preheat oven to 375
Wash and pierce potatoes with fork
Coat potatoes generously with olive oil
Sprinkle kosher salt over potatoes
Place on baking sheet and bake for 1 hour
Remove from oven, use knife to cut line along top of potato
Squeeze the ends of the potato together to open
Roasted Zucchini
Ingredients
1 large zucchini
Olive oil
Fine sea salt and black pepper
Shredded Parmesan cheese
Instructions
Preheat oven to 375
Wash and cut zucchini lengthwise into ¼ inch slices
Place in baking dish
Drizzle with olive oil
Season with salt and pepper
Sprinkle with shredded Parmesan cheese
Cook for 20 minutes
Remove from oven and serve
